Solis launches its first craft beer in collaboration with the Parisian brewery Memento 🍻
Solis, a Parisian Mediterranean restaurant, takes another step into the world of taste by launching his first craft beer.
In collaboration with the Parisian brasserie Memento, located in Nanterre, this craft beer perfectly embodies the values of our house: high standards, local produce, innovation and the pleasure of sharing.

Craft beer has been booming in France for the past decade. In Paris, numerous urban breweries are popping up, and gourmet restaurants are no longer hesitant to offer beer and food pairings.

Solis is fully in line with this dynamic, offering a beer that bridges the gap between culinary tradition and brewing innovation.
Why a Solis beer? 🌿
Since our opening, we have always sought to offer a complete culinary experience consistent with our Mediterranean identity. If our plates tell stories of sun, sea, fresh herbs and conviviality, we were missing one element: a signature drink that lives up to expectations.
Wine and cocktail lists are obviously carefully thought out, but a home beer allowed us to go even further.
We wanted to offer an alternative artisanal, refreshing, local and in line with the new expectations of gastronomy and craft beer lovers.
This first brew is a limited edition, depending on the reception of our customers, we are already considering a second production, or even new collaborative recipes with Memento.
An obvious collaboration with a brewery in Nanterre 📍
To bring this project to life, we chose to collaborate with Memento, a Parisian craft brewery based in Nanterre.
Founded by three enthusiasts of craft beer, Olivier, Fabrice and Philippe, the Parisian brasserie Nemeto, based in Nanterre, has established itself today as an essential reference in the world of craft beer in Île-de-France.
Founded in 2019 after several years of amateur brewing, which began in 2013, the brewery embodies a human and committed project, led by this trio of founders, joined in 2021 by François, brewer and sales manager.
Housed in a former 19th-century agricultural barn, transformed into a true brewing sanctuary, the Nemeto brewery takes its name from the Celtic word nemeto, meaning sacred place.
It is distinguished by its exclusively local and responsible production: all the beers are organic, brewed from ingredients from short circuits, with an eco-responsible approach integrating the recovery of draff (brewing residues), the reduction of water consumption and the use of recyclable packaging.
In addition, Nemeto is developing a zero-waste artisanal biscuit factory, illustrating its strong commitment to the circular economy. Artisan of Tourism of Hauts-de-Seine, this Nanterre brewery also offers guided tours and tasting workshops, showcasing the know-how of local brewers and the universe of craft beer Parisian in a unique production location.
Their approach appealed to us: organic ingredients, short supply chains, creative recipes, and, above all, a genuine focus on customer desires. Together, we created a beer that respects the codes of craft beer, while drawing inspiration from the flavors of the Mediterranean.

Memento know-how, a guarantee of quality
Founded in 2019 in Nanterre, Memento Brewery is part of a new generation of Parisian craft breweries focused on transparency, sustainability, and creativity. Produced in small batches, with meticulous attention to detail.
Choosing a local brewery was also an ethical choice: less transport, more responsiveness, and above all, a direct link between the restaurant and the brewer. Solis beer Salve » is brewed at 7.69km.
A recipe with Mediterranean influences 🌊
Solis Beer – "Salve" is a blonde with a fine and persistent foam. But what sets it apart are its subtle aromas of rosemary and of lemonThese ingredients, typical of Mediterranean cuisine, have been integrated into the brewing process at different stages to preserve all their freshness.
It presents:
- A light golden color with solar reflections
- A herbaceous and floral nose, evoking the hills of the South
- A lively, light, slightly bitter and very thirst-quenching mouthfeel
- A dry finish, perfect for meals
The alcohol content is moderate (5%), in order to make it an accessible tasting beer, both for craft beer lovers and for those discovering the craft beer.
